Sour-Mash Cherry Ale
An experimental beer that is our own creation; mashed overnight to allow lactic acid fermentation.
This process increases the acidity of the mash to a pH of 3.5 (most of our mashes have a pH around 5.2).
This acidity provides a pleasant level of tartness that plays nicely off of the 170 pounds of sweet cherries we added to the fermenter.
ABV – 7.3%.
