			<content:encoded><![CDATA[<p>Debuting Wednesday, March 3rd is the first in a series of beers based on recipes culled from the brewing logs of British breweries, both operating and defunct, as well as modern interpretations of ancient, rare and vanishing beers from Europe. We’ll be brewing one a month until we run out of recipes.</p>
<p>First up is a recreation of a 1916 London X Mild from John Courage’s Anchor Brewhouse in Horsleydown, Bermondsey, London. Nowadays “Mild” refers to a specific style of beer that is generally low in alcohol and mildly hopped, but &#8220;Mild&#8221; was originally used to designate any beer which was young or unaged and did not refer to a specific style of beer.</p>
<p>This is Mild from just before Mild gravities began to plummet due to grain shortages towards the end of WW I. Gravities (the amount of fermentables) were limited by law &#8211; at one point the average Original Gravity of all the beer produced by a brewery could be no higher than 1030º which would result in an average of 2.8% alcohol by volume(ABV). The gravity of Milds suffered so that breweries could still produce full strength and profitable beer.</p>
<p>Ours weighs in at 1046º OG for an ABV of 4.9%, has 21 bitterness units and is an amber color.</p>

<p>Two Headed Dog is an intense Colorado DIPA made for hop lovers. Abundant Yakima Valley hops give this medium-bodied ale fruity citrus, floral and spicy flavors over a firm maltiness. It finishes with a lingering bitterness. Served in a snifter. 8.4% ABV, 114 IBU.</p>

			<content:encoded><![CDATA[<h2>DINING REVIEW: Phantom Canyon still serves success after 15 busy years</h2>

<p>Phantom Canyon Brewing Co. is such a stalwart of the downtown dining and carousing scene that it is hard to imagine a time before it was here.</p>
<p>It&#8217;s hard to imagine a time when its stately address, the Cheyenne Building, with its heavy oak doors, gorgeous local stone and high, tin ceilings, was slated for demolition in favor of a parking lot, until Phantom&#8217;s owner, geeky Denver Mayor John Hickenlooper, who was then just a geeky Denver brewer, bought the decrepit building, fixed it up, and used it to introduce the city to the relatively new concept of a microbrew pub.</p>
<p>I was mulling all this over a frothy pint of Phantom&#8217;s Anniversary Ale at the bar recently.</p>
<p>It was a weeknight and the place was packed with both after-work drinkers and folks sitting down to cloth-napkin dinners. Servers navigated the perilously boisterous bar, hoisting trays of hot food. The bartender pulled fresh pints from an old beer engine.</p>
<p>Upstairs, the clack of billiard balls mixed with the clink of glasses.</p>
<p>It&#8217;s been just over 15 years since Phantom opened, and what I find hardest to imagine is how the place has managed to not be haunted by the complacency of its own success.</p>
